Breakfast Sandwich with Blue CheeseThis is based on a recipe that I had published in the Chefs of the West column of Sunset Magazine. The variation was forced because I was on a Russian river cruise and the buffet had no peanut butter. Trust me enough to try this before you decide if it's exciting. 2 slices whole-wheat bread (or brioche if available) toasted Toast bread. Spread one slice of toast with a thick layer of blue cheese. Arrange the lettuce on the blue cheese covered toast. Arrange the tomato slices on the lettuce. Salt tomato to taste. Arrange bacon evenly over tomato. Cover with second piece of toast. Press the sandwich firmly with the palm of your hand. Enjoy! |
