Breakfast Sandwich with Blue Cheese


This is based on a recipe that I had published in the Chefs of the West column of Sunset Magazine.

The variation was forced because I was on a Russian river cruise and the buffet had no peanut butter.

Trust me enough to try this before you decide if it's exciting. I've told many friends about it, and met with a surprising number of narrow minds.


Breakfast Sandwich with Blue Cheese

Makes one hearty sandwich


2 slices whole-wheat bread (or brioche if available) toasted
3-4oz. Blue Cheese (Bring to room temerature to soften.)
Lettuce
Tomato slices thick and ripe
6 thick-cut bacon slices, cooked crisp
Salt


Toast bread.

Spread one slice of toast with a thick layer of blue cheese.

Brioche toast with blue cheese

Arrange the lettuce on the blue cheese covered toast.

Arrange the tomato slices on the lettuce.

Salt tomato to taste.

Arrange bacon evenly over tomato.

Cover with second piece of toast.

Press the sandwich firmly with the palm of your hand.
