Ginger Preserved in Vodka

Are you tired of throwing away decomposed fresh ginger that you forgot was in the refrigerator?
Freezing isn't the answer. The ginger loses its crisp texture.
Fresh ginger can be preserved virtually forever by immersing the peeled root in vodka and storing it in the refrigerator.
When needed, grate the ginger with a micro plane into soups, stews, marinades, salads, etc.
Do NOT discard the vodka. Try inventing new cocktails.
