Low(er) Calorie Toasted Cheese Sandwich with Bacon and Tomato


Not only is this recipe fast (if the cooked bacon is leftover from a previous meal), but it avoids the very high calorie contribution of buttering and pan toasting the sandwich. Not creating any dirty dishes also adds to the pleasure of it.

Low(er) Calorie Toasted Cheese Sandwich

2 slices whole wheat bread
2 slices American cheese
1 whole 4+" RIPE homegrown Beefsteak tomato
4-6 slices Bacon, cooked crisp

Toast the bread in a toaster.

Core the stem area from the tomato and make one medium (1/4") slice from the center. Reserve the unused end pieces for some lowly use such as a salad.

Build the sandwich with the cheese, tomato, and bacon.

Place on a doubled paper towel on a microwave safe plate.

Microwave on medium setting as needed to melt the cheese.
