A savory, Monterey jack cheesy, smoky chipotle chili laden pinto bean side dish. Cooks in microwave in four minutes. Leftovers can be re-heated and are great. Westerners would serve this with a 16oz. ribeye steak grilled in the four minutes (in other words RARE.) it takes to prepare the beans.

Makes two servings. The recipe can be doubled or trebled if needed.


1 15.5oz can "Trappey's" brand "Jalapinto" Pinto Beans (Accept no substitutes.)
   (Can be ordered directly from the cannery in 24 can case for approximately $12 plus shipping.
   (Out of Business.)

3 1" cubes Monterey Jack cheese

½ Tbs. "Búfalo" brand Chipotle Mexican Hot Sauce (Note, this sauce is made from smoked jalapeños.)

1 Tbs. Mild green taco sauce (I prefer La Victoria brand.)

4 strips of cooked bacon (minced)

1/4 cup minced Green onion


Assemble all ingredients except green onions in glass or ceramic micro-wavable container and cover with lid or plastic wrap. If using plastic wrap, tent and allow for venting.

Microwave on high for 2 minutes, turn, and repeat until cheese is melted and mixture is boiling.

Do not overcook, or butterfat will separate from the cheese.

Stir in green onions and serve.
